Smoked Sausage Mac And Cheese

Who doesn’t love mac and cheese? It’s hearty and gives you sustained energy for the day. It’s especially helpful for children that are picky eaters. All kids love mac and cheese. We have a great homemade recipe that your whole family will love. With the addition of Uncle John’s Pride Mild Country Smoked Sausage, this carbohydrate heavy meal is balanced with protein. Round it off with a vegetable side such as green beans, corn or cauliflower and this is a delicious meal your family will ask for over and over again. Without further ado, let’s get cooking!


  • 1 package Uncle John’s Pride Mild Country Smoked Sausage
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • ¾ teaspoon granulated sugar or sugar in the raw
  • ¼ teaspoon kosher salt
  • ¼ teaspoon celery salt
  • 1/8 teaspoon crushed red pepper
  • 1/8 teaspoon dry mustard
  • 1 pound dry elbow macaroni
  • 2 tablespoons butter or margarine
  • 1 pint (approximately 2 cups) heavy whipping cream
  • ¼ cup finely chopped onion (optional)
  • ½ pound (8 ounces) American cheese, cut into blocks
  • ¾ cup (3 ounces) shredded sharp Cheddar Cheese
  • 1 additional teaspoon salt
  • ½ teaspoon ground white pepper


The flavor of Uncle John’s Pride Mild Country Sausage is brought out with a homemade rub. Combine the black pepper, paprika sugar, kosher salt, celery salt, crushed red pepper and mustard in a small bowl. Mix well to be sure that all of the ingredients are combined. Preheat your grill to medium heat and rub the seasoning mixture listed above onto the sausage. Grill the sausage for approximately 10 minutes until the casing begins to turn brown and crisp. Be sure to turn the smoked sausages on the grill to ensure all sides are cooked through. When they are done the cooking, slice into small slices.

While you are waiting for the sausage to be done, cook the macaroni according to the directions on the box. We prefer al dente pasta, but younger children aren’t always a fan of the harder texture of the pasta. Melt the butter/margarine in a large saucepan over medium heat. You know it is done with it begins to get bubbly. Next, add the heavy whipping cream and onions being sure to mix well. Bring this mixture to a boil, stirring occasionally. Start adding the chunks of American cheese. We found the easiest way is to add a few chunks and mix well with a wooden spoon until those pieces are melted. Once all of the American cheese is combined, next move on to the shredded cheddar cheese. To prevent this from burning, you want to use a wire whisk as you are adding it. Cook until everything is combined and slightly bubbling. Be sure to mix frequently so none of the cheese mixtures stick to the saucepan. When your macaroni is done draining, add it back to the large pit you originally cooked it in. Add the cheese mixture from the saucepan. Stir this with the wooden spoon over medium low heat until everything is mixed and warm. Lastly, add in the sliced Uncle John’s Pride Mild Country Sausage. You want to serve this immediately while it is still warm. With a cook time of only 30 minutes, dinner time will be a breeze! Enjoy your smoked sausage mac and cheese.
